Alma Mater Select - Pinot Noir
Tasting Notes
Full-bodied, velvety red, and well-rounded - reminiscent of an opulent Murcurey from Burgundy. Aging for one year in French oak barrels highlights the cherry and strawberry compote flavours in addition to warm chutney spices and a hint of fresh herbs. Enjoy this wine now!
Suggested Food Pairings
This would be perfectly paired with a mushroom and brie tart or roasted duck breast with saskatoon berry compote. The classic Pinot Noir pairing is to warm a generous wedge of brie cheese, serve with a fresh baguette and enjoy!
Alma Mater Select - Pinot Blanc
Tasting Notes
A first impression is of ripe pears and green apple aromas. This wine has classic Pinot Blanc characteristics, with ever-present green apple flavours. This wine is very adaptable and goes great on its own on the patio or paired with a variety of dishes. Cheers!
Suggested Food Pairings
This is an easy going summertime wine which would pair well with just about any pork or fish dish and even some spicy Asian dishes. You can't go wrong pairing this wine with a fresh fruit salad.
Alma Mater Select - Meritage
Tasting Notes
This 2004 Meritage was crafted in the quintessential Bordeaux style of blending 50% Merlot with 25% Cabernet Sauvignon and 25%Cabernet Franc. The end result is a multi-dimensional wine, showcasing blending dynamics at their best. The Cabernet Sauvignon brings notes of dark black currants, rich dark chocolate and a tannin backbone to support the warm nutmeg and clove spices and earthiness of the Merlot. The Cabernet Franc adds subtle fresh raspberry notes and soft acidity, and a work of art is made! Each wine was individually barrel aged for 12 - 24 months in both French and American oak. Decant and enjoy now with robust red meat dishes or cellar until 2012.
Suggested Food Pairings
The ultimate red wine to decant before serving and then enjoy with a dinner party. Suggested recipes to follow are: Beef Bourguignon or Beef Tenderloin steaks with a mustard Cognac glaze. Also remember to cellar a few bottles and open one every year to find the optimal drinking time.
